Waffles

Delicious Waffles


Ingredients: 

2 cups all-purpose flour 
4 teaspoons baking powder
1 teaspoon salt 
2 cups sugar 
1/2 cup butter, room temperature
2 eggs
1 3/4 cups milk
1 teaspoon Vanilla extract




Directions:
Preheat waffle iron. 
Pour the mix onto the waffle iron.
Pour the mix onto the waffle iron.
Beat eggs in large bowl with hand beater until fluffy. 
Beat in flour, milk, butter, sugar, baking powder, salt and vanilla, just until smooth. 
Spray preheated waffle iron with non-stick cooking spray. 
Pour mix onto hot waffle iron. 
Cook until golden brown. 
Serve hot.

Sue's tip: Sempre que eu quero que a receita de bolo ou nesse caso de Waffles fique fofinha, eu peneiro a farinha.

Cream Cheese Frosting

Ingredients
Recipe #1
  • 1 pound cream cheese, softened
  • 2 sticks butter, softened
  • 1 teaspoon vanilla extract
  • 4 cups sifted confectioners' sugar

Directions

In a large mixing bowl, beat the cream cheese, butter and vanilla together until smooth. Add the sugar and on low speed, beat until incorporated. Increase the speed to high and mix until very light and fluffy. Garnish with chopped pecans and a fresh raspberry or strawberry. Cook's Note: Frost the cupcakes with a butter knife or pipe it on with a big star tip.

  • 8 ounces (227 grams) cream cheese, room temperature
  • 1/2 teaspoon vanilla extract
  • 1/2 cup (60 grams) confectioners' sugar, sifted
  • 2/3 cup (160 ml) cold heavy whipping cream (double cream) (35-40% butterfat)

Directions

In a large mixing bowl, beat the cream cheese, add the sugar and vanilla together until smooth. Add the whipping cream. Increase the speed to high and mix until very light and fluffy. Cook's Note: Frost the cupcakes with a butter knife or pipe it on with a big star tip.

Red Velvet Cupcakes

Hey there everyone, 
Como muitas pessoas me perguntam como se faz o Red Velvet acabei postando aqui. Eu os fiz essa semana com uma receita que achei a internet, porém eles ficaram meio gordurosos demais pro nosso gosto. Então, especialmente pra vocês, encontrei essa receita que não usa óleo, mas sim um pouco de manteiga enquanto navegada no Joy of Baking.

Sue's Red Velvet Cupcakes with Cream Cheese frosting
Ingredients
  • 1 1/4 cups (125 grams) sifted cake flour
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 tablespoons (10 grams) cocoa powder
  • 1/4 cup (57 grams) unsalted butter, at room temperature
  • 3/4 cups (150 grams) granulated white sugar
  • 1 large egg
  • 1/2 teaspoon pure vanilla extract
  • 1/2 cup (120 ml) buttermilk
  • 1 tablespoon red food coloring
  • 1/2 teaspoon white distilled vinegar
  • 1/2 teaspoon baking soda

Directions

Preheat oven to 350 degrees F (180ºC - fogo baixo) and line 12 muffin tins with paper cupcake liners.

In a large bowl sift together the flour, baking powder, salt, and cocoa powder.

In the bowl of your electric mixer, or with a hand mixer, beat the butter until soft (about 1-2 minutes).
Add the sugar and beat until light and fluffy (about 2-3 minutes).
Add the egg and beat until incorporated.
Add the vanilla extract and beat until combined.

In a measuring cup whisk the buttermilk with the red food coloring.
Alternately add the flour mixture and buttermilk to the butter mixture.
In a small cup combine the vinegar and baking soda. Allow the mixture to fizz and then quickly fold into the cake batter.

Working quickly, divide the batter evenly among the 12 muffin cups and smooth the tops with an offset spatula or the back of a spoon.

Bake in the preheated oven for approximately 18 - 23 minutes, or until a toothpick inserted in the center of the cupcakes comes out clean.
Cool the cakes in their pans on a wire rack for 10 minutes and them remove from pan.
Let cool completely before frosting.

Good Old-fashioned American Pancakes


Buttery Pancakes
Pancakes with butter and Maple Syrup
Ingredients: 
1 1/2 cups all-purpose flour 
3 1/2 teaspoons baking powder
1 teaspoon salt 
2 tablespoons sugar 
3 tablespoons butter, melted 
1 egg 
1 1/4 cups milk
Sue's tip: I usually use brown sugar (açúcar mascavo) so the pancakes are sweet but not too much. And I also add 1 teaspoon Vanilla extract (essência de baunilha).


Chocolate sauce Pancakes
Pancakes with Chocolate Sauce
Directions:
Sift together flour, baking powder, salt, and sugar in a large bowl. 
Whisk in melted butter, egg, and milk until combined. Let batter rest for 5 minutes. 
Preheat a large skillet over medium-high heat. 
Pour batter into the hot skillet, about 1/4 cup of batter for each pancake. 
Cook for 2 to 3 minutes, until bubbles appear on the sides and center of each pancake. 
Flip and cook until golden, about 1 to 2 minutes.

Sue's tip: Nas pancakes dessa fotinho aqui, eu ainda adicionei "chocolate chips", aquelas gotinhas de chocolate, à receita, e como não temos Maple Syrup aqui em Caxias, fiz uma calda de chocolate pra colocar por cima - que foi só derreter chocolate no microondas e adicionar um pouquinho de leite pra não endurecer mais. Na hora de servir coloquei 1 banana picada. Fácil! ;)
